In the 1990s, a full-course meal of tiger blowfish in Tokyo was said to have cost between 30,000 and 100,000 yen.
Often called the "diamond of the sea", tiger blowfish milt (the sperm sac of the fish) is considered the finest delicacy.
At long-established Japanese restaurants, the price can easily exceed 10,000 yen per serving (about 50 grams).

"Blowfish" can refer to nearly 500 different types of fish. Of these, only 22 varieties can actually be eaten (as allowed under Japanese law). And the finest of these, the "king" of blowfish, is said to be the tiger blowfish(Tora-fugu).

 

Blowfish is rich in collagen, and eating blowfish sashimi and skin can even have a beautifying effect! Blowfish is also high in protein, and low in fat and calories, and is notable for having far less fat than most other kinds of fish.

 
 
 
 

The first thing many people may think of when they hear "blowfish" is "poison."
The poison in blowfish is called tetrodotoxin, and was first identified and named by Yoshizumi Tahara, a Japanese chemist. Since that time, Japan has remained a world leader in research into blowfish toxin.
Still, blowfish toxin remains a puzzle in many ways. One theory says that tetrodotoxin is produced within the blowfish's body, while another says that the toxin is stored in the body as a byproduct of the food the blowfish eats.
In addition, some varieties of blowfish carry no toxin at all, while others are highly toxic throughout their bodies.
Since ancient times, the Japanese have studied and learned ways of preparing delicious blowfish cuisine. Blowfish sashimi, with a texture found in no other fish, is especially popular.
Using specialized techniques to prepare and enjoy the toxic tiger blowfish is something unique to Japanese food culture.
